Mexican One Pot: Arroz a la Tumbada

Arroz a la Tumbada is a conventional one particular-pot dish from the Veracruz location of Mexico. The dish is easy, comforting and super tasty.

  • 1 lb Jasmine rice 
  • ½ diced Onion
  • 3 cloves Garlic cloves minced
  • 2 pieces Bay leaf
  • 3 oz Tomato paste 
  • 2 ½ cups Veggie broth
  • ¼ lb Shrimp 
  • ¼ lb Mussels
  • ¼ lb Calamari (cleaned)
  • ½ lb Clams  
  • ½ bunch  Cilantro  
  • Salt to style
  • 3 oz  Extra Virgin Olive oil 
  • Dice the onion and garlic.

  • In a medium casserole, sauté the veggies with additional virgin olive oil and bay leaves.

  • Once the garlic & onion are caramelized, include the seafood and allow it prepare dinner for a pair of minutes.

  • Take out the seafood from the casserole, sauté the rice, include the tomato paste and the veggie broth and prepare dinner for 8 minutes.

  • Incorporate the seafood and season to taste. Address the casserole and leave it to cook dinner for 5 minutes relaxation for just one additional minute and serve.

  • Serve and beautify with cilantro leaves.

  • **Add any seafood and chili oil that appeals to you!
